Ingredients:
2 chopped onions
1 potato
6-7 prawns
2 eggs
1 cup of milk
40 gm butter
Finely chopped coriander leaves
Salt
Water
Method:
Peel and cut the potato into big chunks. Boil the onions and potatoes and make a puree.
Peel and devein the prawns. Wash and cut into small pieces.
Separate the white and the yolk of the eggs. Whisk the yolk with milk.
Heat butter in a pan, add the prawns and cook. As they start glazing, add onion and potato puree. Then add egg yolk and milk mixture. Cook for some time.
As the soup starts thickening, add water, salt and coriander leaves. Cook for some time.
Now gently add the egg white, stirring constantly. Serve hot.
